Jeyukbokkeum(stir-fried pork) is a dish that serves pork soaked in seasonings made with red pepper sauce which is then stir-fried. The cooking process is simple, but as pork is the main ingredient, diners can feel full. It also provides the psychological satisfaction with “a meaty meal enjoyed.” Therefore, everyone in Korea enjoys eating. It is also a dish that foreigners operating in Korea like. It is preferred especially by athletes who need to take meats. #Enjoying jeyukbokkeum more delicious

 

The main ingredients of jeyukbokkeum are pork cuts of neck, belly, shoulder, and haunch. One can choose pork cuts that please one’s palate. If you want to sample the uniquely oily taste of pork, we recommend pork belly, whereas if you don’t like greasiness, we recommend haunch. If you want both appropriate fat content and tender meat, shoulder is the best. For those who want the fresh meat taste, we recommend not so much frozen pork as refrigerated pork. If you do not like your food spicy, you may replace red pepper sauce with soy sauce.

 

#Recommended food with jeyukbokkeum

 

The perfect food to serve with jeyukbokkeum is rice. Cooked rice mixed with stir-fried pork delivers an excellent taste. It is also great to eat it together with wraps. That is why Korea has many restaurants that serve dishes that combine stir-fried pork and cooked rice, that is, jeyukdeopbab(spicy stir-fried pork with rice) or jeyukbibimbap(spicy pork bibimbap). Jeyukbokkeum served with kimchi and tofu is also great. First, you add kimchi to jeyukbokkeum and stir-fry them together. Then, parboil tofu and spray a little sesame seed oil on it. By having kimchi, jeyukbokkeum, and tofu together, you can enjoy the aromatic flavor and spiciness from the combination.

 

 

 

 

 

 

#Ingredients and Quantities

 

Pork 500g, 1.25 onion (250g), 9 pieces of small green onion (90g), 2 tbsps of frying oil

Spicy soy sauce: red pepper sauce 4 tbsps, red pepper powder 2 tbsps, soy sauce 2 tbsps, mashed scallion 2 tsps, mashed garlic 2 tsps, ginger juice 1 tbsp, sake 2 tbsps, a little black pepper

 

 

 

 

 


 

Recipe

Get 0.3thick pork belly and cut it in the serving size that can be put wholly in your mouth.

 

 

 

 

 

 

Julienne the onion.

 

 

 

 

 

 

Cut 6 out of 9 small green onions in the length of 4and cut the remaining 3 in the size fit for garnish.

 

 

 

 

 

 

Mix the other ingredients with the red pepper sauce to make a spicy soy sauce.

 

 

 

 

 

 

Add the spicy soy sauce to the prepared pork and knead them together. And leave it alone for 30 minutes to get it soaked in the seasonings.

 

 

 

 

 

 

Pour 1 tablespoon of frying oil on a heated pan and stir-fry onion briefly.

 

 

 

 

 

 

Add 1 tablespoon of frying oil and stir-fry pork lest it be scorched. When the pork is completely cooked, add the stir-fried onion and long slices of scallion together.

 

 

 

 

 

 

Move the well-cooked pork to the dish and put diced green onion on top.

 

 

 

 

 

 

Tips. As for the choice from pork cuts, pork belly is the best. It is because oil is there. If you use less fatty shoulder or tenderloin, they should be minced to be used for the dish. Chicken marinated in the seasonings for jeyukbokkeum is also served best when grilled. We recommend that you include cabbage as an ingredient that is effective in improving digestion and adjusting blood pressure.
